what is the most ideal LED size in terms of diameter for a modern pool deck? Also what's your idea about LED colors, they usually come in either white or blue?

3/4 in diameter size is among the most common LED lens sizes. It's important that the LED deck light sits flush or nearly flush on a pool deck so it is not a trip hazard. LED deck lights come in just a few colors, but I would recommend installing white as most people will prefer this.
